This is a comfortable, good value filet knife. I wanted a separate filet knife for the kitchen for when I have fish to clean. This one almost matches my set and you can hardly tell that’s its any different when it’s in the knife block. It wasn’t crazy-sharp out of the box, but ran it through the sharpener a few times and that fixed it right up!

Now that’s a knife! This knife cuts so easily beautifully! It is super sharp, so care is needed in ising it. I love thst it comes wirh a nice gift box. I put it away in the box after each use to keep it out of my grandson’s rreach. Great knife! Really good value.

I use a fillet knife quite a bit during summer months for butchering chickens and filleting fish. The problem is keeping the knives ultra sharp. My older knives are not made from high quality steel.
This knife is made from high carbon stainless steel. It is a high quality Chinese steel but maybe not as good as Japanese VG10 steel.
The tang is a full tang, so it runs through the handle without a weak point. It comes sharpened at a 15 degree double bevel. It is roughly 1.5mm thick near the handle tapering to just under 1mm at the tip.
We don’t do much ice fishing, and we do not butcher during the winter, so I decided to try this knife on chickens that we pull from the freezer and thaw. This knife cuts through the meat like butter. It also easily takes care of sections in the middle that are still frozen and keeps on cutting.
This really is a high quality fillet knife. I just wish it came with a sheath.

I buy a big $40 slab of salmon at a club warehouse every time I go, then use a nice set of heavy duty kitchen scissors to portion it out, so I can freeze what I won’t use right away. Recently the selection has not been what it was, and getting it skinless isn’t always possible. I needed a knife that would slice through that salmon like butter, not only to portion but also to remove the thin skin (I think it makes the fish taste fishier).
This knife feels good in my hand and yes, slice through and gets the skin off like it’s going through butter. I didn’t know I needed this knife, but now that I have it, I can’t imagine working in my kitchen without it. I also see that there’s a Mama’s Great bread knife and oh my, I think I might need it too.

I was pleasantly surprised by the fit and finish. This knife feels very solid, has a really good amount of flex especially towards the tip, and arrived quite sharp as advertised. Oddly I thought it felt dull at first, but a quick shave test proved that it actually has a very decent edge. This should do the trick if you need a shorter fillet knife!
